Although this tangy, simply dressed cucumber salad was inspired by a dish the Shaw family enjoyed in a Chinese restaurant, Eva Shaw has found that it complements almost any meal.

How to Make It

In a large bowl, combine vinegar, sugar, and 1/2 teaspoon salt.

Peel cucumbers, if desired, and slice very thin. Add to dressing and mix to coat. Add more salt to taste and sprinkle with peanuts.

Ingredients

 1/4 cup rice vinegar
 1 teaspoon sugar
  About 1/2 teaspoon salt
 3 English cucumbers (about 1 1/2 lb. total)
 1/2 cup unsalted roasted peanuts, coarsely chopped
