How to Make It

Step 1

Combine all ingredients in a Dutch oven; bring to a boil over medium heat. Reduce heat, and simmer, stirring occasionally, 20 minutes.

Spoon relish into hot jars, filling to 1/2 inch from top. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands.

Process in boiling-water bath 10 minutes. Let stand 1 week before serving. Refrigerate relish after opening.

 2 1/4 cups white vinegar (5% acidity)
