Nothing could be easier to make than some pickled shrimp. Like most recipes, tweak this one to your taste. Pickled shrimp are great on a cracker with a splash of your favorite hot sauce. Or add a few to a salad. If you see some beautiful plump shrimp at the market—grab them! 

 

How to Make It

Peel and clean the shrimp—I like to keep the tail on. Blanch the shrimp in boiling water for 3 minutes. Drain thoroughly.

Place all other ingredients in a mason jar. Add shrimp. Shake to cover shrimp in marinade. Place in fridge and marinate overnight. Enjoy!

Ingredients

 1 ½ lbs shrimp
 1 sweet/red onion, thinly sliced
 1 small lemon, thinly sliced
 ¾ cup vinegar—cider or rice
 ½ cup neutral oil
 ¼ cup fennel fronds
 ½ tsp celery seeds
 ½ tsp sugar
 1 tsp salt
 1 tsp black peppercorns
 optional: jalapeno slices
