su-Mesclun Salad Dressing

Using mesclun for the dressing itself is an inventive way to get the most from an ingredient--especially if your salad greens are mesclun, too. We used all green leaves to keep the bright color.

Blend all of the ingredients, stopping often to push greens closer to blender blades.

 1 large garlic clove, minced
 1/3 cup extra-virgin olive oil
 3 tablespoons lemon juice
 1 teaspoon kosher salt
 2 1/2 cups loosely packed mesclun (green leaves only)
