Cut 1/2 a baguette (2 1/2 in. wide; 1/2 lb. total) diagonally into 12 equal slices. Arrange slices in a single layer on a 12- by 15-inch baking sheet. Bake in a 450° oven until lightly toasted, about 5 minutes.

In a bowl, mix 1/2 teaspoon grated lemon peel with 1/3 cup cambozola cheese. Spread equally on 1 side of toast slices.
