Crema is tangy, pourable Mexican-style sour cream, which isn’t widely available. Here restaurateur and cookbook author Isabel Cruz creates crema from ordinary sour cream. It’s delicious as a dipping sauce for rich foods like Plantain Fries, or for drizzling over enchiladas.

How to Make It

On a cutting board, mince garlic clove, sprinkle with salt, and mash to a paste with the back of a spoon. Scrape into a serving bowl and whisk in lime juice, followed by sour cream.

 3 tbsp freshly squeezed lime juice
 1 cup sour cream
