Nakul Mahendro, co-owner of Badmaash, a modern Indian eatery in Los Angeles, shared his recipe for chicken tikka poutine with us. "Poutine is a classic French-Canadian dish of fries, cheese curds, and brown gravy. It is the ultimate Canadian comfort food and perfect after a night of drinking. We make ours with a heavy slap of Indian flavor; tossing the fries in a paprika masala, then we top the whole dish with tandoori chicken tikkas."
"This recipe will require cooking and assembling the various parts simultaneously," he says, but the prep can be done a day in advance.
"Using some grocery-store essentials, this simplified recipe will make things easy. You will need an air fryer for the fries, a saucepan for the gravy, and a baking sheet for the chicken," Mahendro tells us. 

How to Make It

To prep the chicken, cut off any excess fat and cut it into 1-inch cubes. For the marinade, mix yogurt, ginger, garlic, salt, pepper, paprika, and red chili powder in a large bowl. Add chicken to yogurt marinade and mix well to smother every piece of chicken. Cover, and allow to sit in the fridge overnight if possible

To cook the chicken, evenly spread marinated pieces on an oil-lined baking sheet and bake at 450°F for 20-25 minutes until crisped on the edges and cooked through. Allow cooked chicken to rest for 5 minutes while you assemble the rest of the poutine.

Place frozen french fries into the basket of an air fryer. Cook at 400°F for 8-10 minutes. Make sure to open the air fryer halfway through and toss the fries around so they cook evenly.

Once crisp on the outside and fluffy on the inside, place into a mixing bowl. Season fries with a pinch of salt, pinch of pepper, and a pinch of parika.

 1 ½ cups brown gravy (powder packet, beef or duck recommended)
