Champagne Vinaigrette
An herbaceous, light dressing that goes very well with citrusy salads. Prep Time: 10 minutes. Notes: Dressing keeps, chilled and covered, up to 1 week.
How to Make It

Whisk together shallots, vinegar, and mustard. Add olive oil, whisking, then whisk in tarragon, parsley, and salt.

1 tablespoon minced shallots (1 large shallot)
3 tablespoons champagne vinegar
1 tablespoon Dijon mustard
10 tablespoon extra-virgin olive oil
1 teaspoon finely chopped fresh tarragon
1 teaspoon finely chopped flat-leaf parsley
1 teaspoon kosher salt
