How to Make It

Cook rice noodles according to package directions. In a large bowl, whisk together lime juice, sesame oil, fish sauce, sugar, salt, and Sriracha. Add cooked noodles and toss to coat.

Arrange noodles in individual bowls, topped with choice of protein, then garnish with carrots, green onions, cilantro, cucumber, and jalapeños. Serve with additional sauce on side and lime wedges.

 14 ounces medium-wide (linguine-style) rice noodles
 1/2 cup lime juice
 1/4 cup toasted sesame oil
 2 tablespoons Thai or Vietnamese fish sauce
 2 tablespoons sugar
 1 teaspoon salt
 1 teaspoon Sriracha
  Toppings
  Pâté, roast chicken, or seasoned, cooked tofu
  Shredded carrots
  Slivered green onions
  Chopped cilantro
  Diced cucumber
  Sliced jalapeño
  Toasted sesame seeds
 1 to 2 limes, cut in wedges
