Reminiscent of chocolate-covered strawberries, these DIY fruit lollipops are made with fresh figs, bittersweet chocolate, and olive oil. No sugar, candy thermometer, corn syrup, or food coloring in sight! Start by cutting off the tops of your figs before combining the olive oil and melted chocolate. Dip the fat, round end of each fig into the chocolate and set on a parchment paper-covered sheet. Next, dip the skewers in the chocolate and insert them into the center of the figs. Chill for 20 minutes before dipping the fig lollipops into the melted chocolate a second time. Finish with a sprinkle of sea salt and chill again until the chocolate hardens, about 10-15 minutes.
