Lentil Veggie Burgers

How to Make It
Step 1

Mix all ingredients except the oil and fixings together in a medium bowl. Form into 4 patties. Chill at least 20 minutes and up to 1 day, covered.

Heat oil in a large nonstick frying pan over medium heat. Cook burgers, turning only once, until browned and hot inside, about 5 minutes total.

Serve each patty with fixings.

*Find cooked lentils in vacuum packs at Trader Joe's or other well-stocked grocery stores.
Ingredients
2 cups cooked lentils*
1/2 cup plain bread crumbs
2 large egg whites
3/4 cup cooked chopped greens, such as spinach or kale
1/4 cup grated carrot
1/4 cup chopped green onion
1/2 cup coarsely grated cheddar cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 tablespoon olive oil
Burger fixings, such as lettuce leaves, sliced tomatoes, pickles, and onions, and ketchup and mustard
