Sauces for fish

Each sauce requires 5 to 15 minutes to prepare, and makes 4 to 6 servings. Serve sauces with any fish suggested for grill cooking. With the exception of the Grapefruit Beurre Blanc, all the sauces can be made at least 1 day ahead, covered, and chilled.
