Use this bartender’s trick to top margaritas with a delicate salt-lime foam


This salt air margarita is a refreshing twist on the Mexican cocktail’s standard salt rim. To make the salt air, start with fine sea salt, lime juice, water, and sucrose esters in a bowl. (Sucrose esters are an emulsifier made from sugar and fatty acids from palm oil.) Once all the ingredients are in the bowl, use an electric mixer and whip for several minutes until you get a frothy texture. Pour your favorite margarita recipe into a glass and top it off with a dollop of salt foam. Pro tip if you’re making salt air margaritas for a party: you can make the foam up to one week in advance, chill it in the fridge, and rewhip the mixture on the day of your event.
