NOTES: Look for a soft, crumbly blue cheese with no rind, such as Point Reyes. Serve with crackers and purchased onion jam. You can make the spread up to 2 days ahead; cover and chill. Let it come to room temperature before serving. PREP TIME: 5 minutes

In a small bowl, stir blue cheese to break up slightly.

Gradually stir in 1/2 cup whipping cream; if mixture is too stiff, add more cream as desired. Add pepper to taste. Spoon into a serving bowl.
