Tokyo native and chef Ryu Isobe moved to L.A. to attend USC and was disappointed by the ramen in town. So after graduation in 2011, he flew in some of the top chefs from Japan to help develop the simple and flavorful five-item menu at his Tatsu Ramen. Isobe designed a customizable menu for the iPad, putting his own spin on the electronic ordering system common in Japan, so with each swipe you can swap pork for tofu, cut the onions, request extra mushrooms, and more.
