su-Lemon-Thyme Simple Syrup

Use this sweetly herbaceous cocktail syrup in our Lemon-Thyme Pimm’s Cooler (it blends well with the pleasantly bitter flavors of the drink). If you’d prefer a mocktail, try the syrup with club soda.

 

How to Make It

Step 1

Stir together sugar, 3/4 cup water, the thyme, and lemon in a small saucepan. Bring to a simmer over medium heat. When the first bubbles appear, reduce heat to medium-low and simmer gently 5 minutes. Let cool, then strain. Keeps up to 1 week, chilled.

 4 slices lemon
