Oakland Pitmaster Matt Horn’s hotly anticipated burger restaurant isn’t open yet, but we’ve got three of his recipes here.

Matt Horn knows burgers. Though he made his name with barbecue, the Oakland-based chef will be opening a burger joint in July. He plans to call it Matty’s Old Fashioned, but don’t think for a second that he’s stuck in the past. Early last spring he posted on Instagram that his aim was nothing less than to “change the burger game.” He won’t have the chance to do that for a few more weeks, but we’re pretty sure the recipes below will change your own burger game.

One other thing Horn knows? Cheese. If you generally prefer your hamburgers unadorned, maybe you just haven’t found the right topping yet. Horn suggests Clover Sonoma products—it’s an easy line to get behind. Clover Sonoma cheeses are organic and free of any coloring agents. The company is family-owned and a certified B-Corp.
