A single sheet pan can be the key to pulling together a meal in a hurry: Just load it with proteins, vegetables, and some well-chosen seasonings, and in a half-hour or so you’ve got dinner done. Instead of monitoring the frying pan or standing by the grill, you can simply line your baking sheet with parchment paper, plop on the ingredients, and let the oven do the difficult work.

Below, you’ll find eight recipes that lean on seasonal produce—which keeps for a while in the fridge—making them all the more reliable when you’re only running out to the store once a week or so. Vegetables like asparagus should be used quickly to avoid spoilage, so plan out your sheet pan ahead of time. As for meats, you can freeze them for months and bake them without defrosting, just make sure to allow for extra cooking time.

When you’re using a sheet pan, be sure to grease it with either olive or avocado oil, or line it with parchment paper or aluminum foil. This simple but important preparations makes for easy, no-fuss clean-up, which is especially helpful after a long day of work.
