When the urge to bake strikes, make dessert lovers turn to pie. It’s easy to understand why. Maybe you have some ripe stone fruits in the summer and they’re on their final day of peak sweetness, needing to be baked into a streusel-topped peach pie. Or you want to amp up that rotisserie chicken you bought from the store—making for an easy and ideal base for a chicken pot pie. 

Whatever the reason or season, pies—sweet or savory—are a treat that can be enjoyed year-round with a variety of flavors and fillings. In those colder winter months when everything is pumpkin spice this, pumpkin spice that, take a step off the beaten path with a different kind of gourd as the base for your pie by using kabocha squash. Our recipe for a kabocha squash pie mixes in crème fraîche to balance sweetness and has ground gingersnaps pressed in a layer on top of a butter crust, before being topped with freshly whipped cream. For a pie fit for the hottest days of the year, we have ice cream pie recipes that require minimal or no baking at all.
