Foil packets, a heap of fresh herbs, and cheese make this vegetarian side dish a camp cooking success.


We love a good foil packet recipe here at Sunset, and this vegetable side dish is no exception. To make these hobo bundles, throw some red thin-skinned potatoes into a pot of water with salt and bring to a boil then simmer. When the potatoes are done, drizzle olive oil onto a piece of foil and add the drained potatoes on top. Layer onions and carrots over the spuds and add salt, pepper, and herbs to taste. Top it off with some more olive oil then seal the foil, set it on a grill to cook, empty the foil packet onto a plate and finish it off with fresh parmesan, parsley, and basil.
