Go for the extra-firm kind called nigari tofu when you want a hearty dish. The moisture has been pressed out of it, so it stands up to grilling and sautéing.

Stir-fry nigari tofu with a mix of salty, sweet, and sour seasonings, add pine nuts for some crunch, and you get a lively filling for a wrap.
