Sunset Eat Fresh, Day 1: Fill up on veggies, and don’t forget to sleep

I’m giving up: After-dinner snacks
I chose this because: As a full-time working mom, there’s always so much to do. My energy and willpower really sink in the evening, and it’s tempting to boost my blood sugar with a late-evening snack (carbs! sweets!) as I pack lunches, run laundry, or try to grab a few minutes for myself.
My biggest challenge: Doing an end-run around the snacking hour and getting to bed at a decent time.
My biggest temptation to cheat: See above.
Coping mechanisms: Fill up on veggies. Brush teeth and make the kids’ lunches right after dinner. Leave an enticing book on the nightstand. (Suggestions?)
Today I feel: Awesomely well-rested after a 2-week vacation and early morning at the gym. (Ah. Perhaps the early morning contributes to the evening sink? Check in with me Friday or so!) Looking forward to a fridge full of winter veg from the farmers’ market.
So, yeah, I have to confess I’m one of those annoying people who actually loves vegetables and whole grains. Eating healthy is no big deal; getting overtired and craving sweets on top of the healthy stuff…well, it happens.
Tonight I’m planning to cook some crazy-looking chartreuse broccoli romanesco in a recipe from Deborah Madison. Sounds like just the thing with seared pounded chicken breasts.
