Chicken breasts are perfect for weeknight dinner because they cook so quickly. And since we enjoy this recipe so much, we decided to share it with you.

When we tested “Chicken Steamed over Ginger-Garlic Rice” in the Sunset Test Kitchen, our team of Recipe Testers loved the technique for cooking the chicken. In step two of the recipe, the chicken breasts are set on top of the rice to cook through along with the rice. You get deliciously moist chicken and one less pot to clean!

If you can’t find a red jalapeño, don’t worry because a green one works just as well.
