Xiquita
Following the success of his first Latin American concept at Lucina Eatery + Bar, 2x James Beard Rocky Mountain Semifinalist Chef Erasmo (Ras) Casiano brings an entirely new concept to Denver with Xiquita, a México City style restaurant rooted in the ancient tradition of making corn masa through nixtamalization. At Xiquita, pronounced “chiquita,” Chef Ras honors the unwavering traditions of his ancestors by showcasing México’s centuries-old nixtamalization techniques that have passed down through millennia. With corn as a red thread, appearing in every dish on the menu in a unique way, Xiquita is an ode to one of the world’s most important indigenous foods that changed the course of history for México and its people.
