A collaboration between Michelin-starred Frasca Hospitality Group and Four Seasons Vail, Tavernetta Vail is the property’s newest restaurant, offering a menu that explores Italy’s diverse cuisines while honoring the mountain culture and distinct foods of its Alpine regions. Inspired by its location, Tavernetta Vail embodies Sprezzatura Alpina—an effortless yet thoughtful and detailed approach towards the dining experience—giving the restaurant an easy, timeless elegance befitting its luxurious setting. Helmed by Chef de Cuisine Ethan Diamant with an Italian-focused wine and spirits program by Wine and Beverage Director Carlin Karr and Senior Sommelier Rylan Bonaccorsi, Tavernetta Vail’s tasteful iterations of Italian favorites include a Vitello Tonnato with black olive crumble and finger limes, Bread Dumplings in prosciutto and parmigiano broth with speck and house-smoked ricotta, Squid Ink Spaghetti in a sea urchin emulsion topped with crab and caviar, and Venison in huckleberry jam and piney maitake mushrooms.
