Picture this: you made a reservation at a restaurant located on the lower level of the famed Rodeo Collection in Beverly Hills. Upon your underground arrival, you see a valet station, flower shop, pay station for parking and wooden door. Outside the door, a host ushers you into a 14-seat omakase restaurant. This is Sushi Note Omakase, which pays homage to classic Tokyo-style sushi spots. Led by Culinary Director Earl Aguilar, a long-term mentee of celebrated Sushi Chef Kiminobu Saito, the intimate restaurant offers an ever-evolving, 20-course omakase experience featuring the freshest imported market fish from Japan, Spain, and New Zealand. Each night, Beverage Director Austin Ferrier and his expert team of sommeliers select interesting and unexpected globally sourced wines to pair with Chef Aguilar’s menu.
