Chef Miles Odell’s first solo concept—rapidly growing in popularity for its with naturally-leavened, hand-rolled, slow-boiled bagels topped with hand-sliced lox, sushi-grade fish and seasonal produce—is a culmination of his Jewish heritage, Japanese fine-dining experience and deep love for bagel culture. Alongside a lifelong affinity for the East Coast’s finest bagels, Miles combines 10 years of self-taught “bageling” and rich cultural experiences in Japan’s best kitchens to create a concept that respects quality and tradition while constantly striving to outdo itself. Located in Denver’s Highlands neighborhood, Odell’s blends old-world charm with modern touches in a historic 1910 building that once housed a beloved bakery. The space honors tradition while celebrating the lifestyle of bagel culture.
