Tapping into this culture and history, Kahuwai Cookhouse’s menu heavily utilizes local Kiawe wood for its fire-based dishes, honoring the live fire cooking style signature to a paniolo ranch while also highlighting local ingredients and traditional Hawaiian techniques like pickling and salting. This culinary history is featured throughout the menu with dishes like Grilled Pineapple Musubi Fried Rice with spam, barrel-aged shoyu and macadamia; Kiawe Wood Grilled Short Ribs with ember charred cabbage, kalbi glaze, and fire-roasted salsa; and BBQ Kumamoto Oysters with fermented garlic butter and grilled lemon. Additionally, Paniolo Night, occurring every Thursday, celebrates the vibrant cultural heritage of Hawaiian ranching with a special evening of live music and a menu centered around the restaurant’s wood-fired kitchen.
