Perched above the Pacific Ocean on the American Riviera, Caruso’s is the Michelin Star and Michelin Green Star restaurant at Rosewood Miramar Beach. Inspired by seasonal ingredients found on California’s Central Coast, Caruso’s highlights Chef Massimo Falsini’s close relationship with local ranchers, fishers and farmers through a memorable, hyperlocal gastronomic journey. Caruso’s sources 90% of seafood from sustainable sources, earning the property recognition as an Oceanwise, FishChoice, and SmartCatch Ambassador. For its sustainability efforts, Caruso’s has received a Three Star Rating from the Sustainable Restaurant Association’s Food Made Good Standard, and Falsini is an Ambassador for Project Zero’s Coral Collective, an organization working to save coral reefs from extinction. The restaurant features a lounge a la carte menu, both a “land” and “sea” tasting menu, a plant-based menu, and several changing prix fixe options complemented by an extensive selection of Central Valley and international wines and hand-crafted cocktails.
