Botanist, which boasts a restaurant, cocktail bar and garden, is inspired by the principles of botany, transporting guests into a world where day blurs into night and food and drink are plenty. The menu depicts the culinary abundance of the Pacific Northwest with local produce, sustainably sourced seafood, and organic agricultural methods from backyard suppliers. Under the direction of Executive Chef Hector Laguna and Head Bartender Jeff Savage, Botanist was named to the 50 Best Discovery list by the World’s 50 Best Restaurants, and received the Exceptional Cocktails Award from MICHELIN Guide in their inaugural year in Vancouver.
