Watercress Salad

Its clean, peppery flavor makes watercress an ideal side for beef.
How to Make It

Trim tough stems from watercress so you end up with 4 loosely packed qts. of leaves and tender stems. Transfer to a large bowl. Drizzle juice and oil over cress and sprinkle with salt to taste. Toss gently.

2 tablespoons fresh lemon juice
1/4 cup extra-virgin olive oil
