Sunset Sips Mexico 70

Essentially a margarita topped with sparkling wine, the Mexico 70 was created by bartender Ryan Fitzgerald as an homage to Mexico’s impressive showing in the 1970 World Cup, which the country hosted. In this version, Mike Gaines, beverage director at Las Brisas in Laguna Beach, California, adds a chile salted rim on a coupe glass that has been stored in the freezer.

How to Make It

Pour tequila, lime juice, and agave syrup into a cocktail shaker.

Add ice to the shaker and shake to combine all ingredients.

Rim the edge of the chilled coupe glass with lime juice and then salt the rim with chile salt (combination of chile powder and kosher salt).

Strain the margarita into the coupe glass and top off with prosecco.

Garnish with a lime twist.

Ingredients

 3 fl oz high quality 100% pure agave tequila (like Patron Silver Tequila)
 1 ½ fl oz lime juice
 ¾ fl oz agave syrup (equal parts agave and hot water)
 chile powder
 kosher salt
 sparkling wine to top off; about 2 fl oz

Directions
