Malibu honey and Amass gin from Los Angeles star in this local take on the Bee’s Knees. 

How to Make It

First, make the syrup: Put honey, dried lavender, and hot water into a heatproof container and stir until well combined. Let sit for 30 minutes. Strain out lavender. Drizzle more honey over lavender buds and dehydrate for candied lavender to use as garnish.

Put gin, lemon juice, and Malibu wildflower lavender honey syrup in a shaker and fill with ice. Shake, then double strain into coupe. Garnish with fresh and candied lavender.

Ingredients

For the Lavender Honey Syrup
 1 cup (plus more to taste) Eli’s Honey (or any high-quality honey)
 ½ cup dried lavender
 1 cup hot water
For the Cocktail
 2 fl oz Amass gin
 1 fl oz lemon juice
 1 fl oz Malibu wildflower lavender honey syrup (see recipe at right)
 Garnishes: fresh lavender, candied lavender
