How to Make It

Muddle the strawberries and tarragon leaves in a cocktail shaker.

Add the vodka, lime juice, simple syrup, and egg white to the shaker. Fill with ice.

Shake vigorously for 20 seconds to create a frothy texture.

Double strain into a coupe glass to ensure a smooth finish.

Garnish with a single tarragon leaf and lightly mist or drip Pernod absinthe over the top.

Ingredients

 3 to 4 fresh strawberries
 10 to 15 fresh tarragon leaves
 1 ½ oz Haku vodka
 1 oz fresh lime juice
 ¾ oz simple syrup
 ½ oz egg white
 A splash (1/8 tsp) of Pernod absinthe
 1 tarragon leaf, for garnish
