Like her mom from Italy, Joanne Santoianni makes the most of sweet, juicy oranges in this ultrasimple salad. Sometimes she even omits the lettuce.

How to Make It

Step 1

Cut peel and white membrane from oranges and discard. Thinly slice fruit crosswise.

Line salad plates with lettuce leaves and arrange orange slices on top.

Sprinkle fruit with sugar. Drizzle olive oil over salads. Add salt and pepper to taste.

 8 to 12 romaine lettuce leaves (6 to 8 in. long), rinsed and crisped
  Sugar
 1 to 2 tablespoons extra-virgin olive oil
  Salt and fresh-ground pepper
