This makes enough for 10 to 12 Hibiscus Mezcal Cocktails and is also good diluted with water, for a classic ­Mexican agua de jamaica.

How to Make It

In a medium pot, combine ­water and sugar with dried hibiscus flowers. Bring to a boil, reduce heat to a simmer, and cook until flowers soften and sugar is mostly dissolved, about 4 minutes.

Strain through a fine-mesh strainer into a jar, pressing flowers with a wooden spoon to release all the liquid.

Discard flowers and let syrup cool.
