2 tablespoon lightly packed tbsp. finely chopped fresh ginger
6 tablespoon fresh lime juice
2 to 2½ tablespoon sugar
2 to 3 tablespoon fish sauce
2 teaspoon finely chopped seeded red or green Fresno or jalapeño chile
In a small bowl, stir together ginger, lime juice, and sugar until sugar dissolves. Taste and adjust as needed.
Add fish sauce and chile; set aside 15 minutes to meld and develop flavors.
