This drink gets its backbone from aromatic gin and a zippy grapefruit shrub, which is herby and tangy. Play with different vinegars to subtly adjust the acidity and flavor profile.

How to Make It

Make the grapefruit-honey and thyme shrub: In a 2-quart saucepan, combine the fruit, honey, vinegar, and thyme. Bring it to a boil over medium heat. Lower the heat and let simmer for 5 minutes. Strain and cool.

Make the cocktail: Combine all cocktail ingredients except the orange peeo and shake well with ice. Strain into a Nick & Nora glass. Garnish with orange twist.

For the Grapefruit-Honey and Thyme Shrub
12 oz grapefruit juice
1 ½ cups honey
1 cup (or more) vinegar (such as red wine, apple cider, or unseasoned rice)
3 sprigs of thyme
For the Cocktail
2 oz gin
2 oz grapefruit-honey and thyme shrub; ingredients above, recipe right
½ oz lemon juice
2 dashes orange bitters
Orange peel, for garnish
