Cinnamon Rolls

Baking is our kind of ritualized autumn indulgence. These ridiculously delicious chai-spice cinnamon rolls are full of fall flavors thanks to ingredients like cinnamon, cardamom, and Clover Sonoma Golden Moon Turmeric Ginger Moon Milk in the dough and in the glaze.

How to Make It

To make the dough: In a medium sized mixing bowl, combine flour, granulated sugar, Himalayan pink sea salt, and instant yeast. Whisk to combine and set aside.

In a medium sized saucepan (or in the microwave), combine Clover Golden Moon and butter and warm over medium heat. Stir until butter is melted and ingredients are warm to the touch, but not boiling, as this will kill the yeast.

Add the wet ingredients into the dry-ingredient mixing bowl. Add in beaten egg. Stir to combine using a spoon or spatula until a shaggy dough forms.

Lightly flour a surface, and knead the dough for approximately 3 minutes. The dough will be firm and slightly shiny, and should easily form a large ball. Place the dough ball into a clean mixing bowl lightly greased with additional butter. Cover loosely with a towel and let it rest for approximately 10 minutes while making the filling.

To make the filling: In a small mixing bowl, combine brown sugar and spices. Mix until combined and set aside.

Use your hands to gently shape your ball into a rectangle, giving yourself a shape to start rolling with. Using a rolling pin on a lightly floured surface, roll out your dough to approximately 14 inches long by 8 inches wide.

Using a pastry brush, spread butter on top of the dough. Sprinkle spice mixture on top of the butter. Roll lengthwise, then cut into approximately ¼ inch pieces, making for 12 cinnamon buns.

Grease your cast iron with remaining butter. Place individual cinnamon rolls into cast iron, cover loosely with a towel, and allow to rise for at least 1 hour. Simultaneously, preheat your oven to 375°.

After an hour, your rolls should have puffed up. Place in the oven at 375°, and bake for approximately 23-25 minutes or until golden brown.

To make the icing: Combine powdered sugar, vanilla paste/extract, and Clover Golden Moon Milk in a bowl whisking until combined. Once cinnamon buns have partially cooled, spread glaze mixture on top. Enjoy warm, or within the next 3 days stored at room temperature. Enjoy with a glass of Clover Golden Moon for the ultimate spiced treat!

 2 ¾ cups all-purpose flour
 ¼ cup granulated sugar
 ½ tsp pink Himalayan sea salt
 1 packet instant yeast

 3 tbsp unsalted butter, plus 2 tablespoons to grease bowl and cast iron

 1 tbsp ground cinnamon
 ½ tsp freshly ground green cardamom

 1 cup powdered sugar
 ½ tsp pure vanilla paste or extract
 2–3 tablespoons Clover Golden Moon
