Celery Simple Syrup

Celery might sound like an unusual ingredient to put in syrup, but it's outstanding mixed with fresh herbs and gin in our Green Gin Cocktail. If you'd prefer a mocktail, try the syrup with club soda.
How to Make It

Stir together sugar, 3/4 cup water, and the celery in a small saucepan. Bring to a simmer over medium heat. When the first bubbles appear, reduce heat to medium-low and simmer gently 5 minutes. Let cool, then strain. Keeps up to 1 week, chilled.
