Banh Mi Rice Noodle Bowl

It’s all about the variety of toppings with a Banh Mi Bowl. Top your noodles with protein of your choice.

 14 ounces medium-wide (linguine-style) rice noodles
 1/2 cup lime juice
 1/4 cup toasted sesame oil
 2 tablespoons Thai or Vietnamese fish sauce
 2 tablespoons sugar
 1 teaspoon salt
 1 teaspoon Sriracha
  Pâté, roast chicken, or seasoned, cooked tofu
  Shredded carrots
  Slivered green onions
  Chopped cilantro
  Diced cucumber
  Sliced jalapeño
  Toasted sesame seeds
 1 to 2 limes, cut in wedges
Step 1

Cook rice noodles according to package directions. In a large bowl, whisk together lime juice, sesame oil, fish sauce, sugar, salt, and Sriracha. Add cooked noodles and toss to coat.

Step 2

Arrange noodles in individual bowls, topped with choice of protein, then garnish with carrots, green onions, cilantro, cucumber, and jalapeƱos. Serve with additional sauce on side and lime wedges.
