This salsa goes with just about any sautéed, roasted, or grilled protein. It's especially good with fish and pork. And if you use organic apples, you can avoid pesticides (most store-bought apples likely have pesticide residue).

How to Make It

Cut apples, bell pepper, and cucumber into small dice. Mince chile. Stack mint leaves and cut into fine ribbons. Toss everything together with lime juice, honey, and salt to taste.

 1 medium red bell pepper
 1/2 English cucumber
 1/2 jalapeño chile
 4 mint leaves
 1/4 cup lime juice
 2 tablespoons honey
