At Sunset it’s our mission to celebrate the Best of the West, including its culinary treasures. And from its citrus groves to its vineyards, our beloved Golden State produces some of the most iconic flavors of the West. Among its treasures are pistachios—those emerald-green nuts that embody the sunshine, soil, and ingenuity of California farming. And yes, we’ve got a thing for pistachios: Our website has over 100 recipes featuring this prized ingredient—from pistachio salsa verde to cookies studded with pistachios, salads garnished, sauces enriched, and on and on. And when it comes to pistachios, few names carry the weight and respect of Nichols Farms. Family-owned since 1961 and headquartered in Hanford, in the heart of the San Joaquin Valley, Nichols Farms has grown into one of the country’s premier pistachio producers. For more than four generations, the Nichols family has combined a dedication to sustainability with an obsession for flavor, delivering pistachios that are as good for the land as they are delicious on the table. At Sunset, as much as we love food, we also love to know the story behind what’s on our plates and Nichols Farms has a story worth savoring.

A Family Legacy in the San Joaquin Valley
Nichols Farms traces its roots back to the early 1960s, when Graydon “Nic” Nichols began farming row crops in Hanford, California. In 1981, the family planted almonds, and by 1983, pistachios had entered the picture—a bold move at the time, when the nut’s market was unproven. Today, under the leadership of brothers James and Jeff Nichols, the farm has grown to more than 4,000 acres, with pistachios accounting for 75% of the land and more than 80 million pounds harvested annually.
Even as Nichols Farms has expanded, it has never lost sight of its roots. The farm employs hundreds of people, many of whom have been with the company for more than a decade, and remains firmly family-owned.
What Makes a Nichols Farms Pistachio Special
Pistachios are grown in and around Hanford, where long, hot summers and cool nights produce nuts with exceptional color and flavor. Nichols Farms has mastered the art of getting those pistachios from orchard to package with extraordinary care. Nuts are processed within 24 hours of harvest—often within 12—to preserve freshness, dried to precise moisture levels, nitrogen-flushed to lock in flavor, and stored in cold storage to ensure quality.
The result? A truly great pistachio. Nichols Farms pistachios are always dry roasted without added oils, letting the nut’s natural richness shine. They’re also Non-GMO certified, so every handful is pure, healthy, and satisfying.

Flavor, Nutrition, and Innovation
Nichols Farms pistachios aren’t just delicious; they’re a complete source of plant-based protein, offering all nine essential amino acids. Add fiber, antioxidants, and heart-healthy fats, and pistachios make a powerhouse snack for any time of day. Beyond their classic dry-roasted pistachios (always without added oils to let the nut’s natural richness shine), Nichols Farms offers a growing lineup of flavored and organic options. Their USDA Organic, Non-GMO certified pistachios come in both in-shell and no-shell varieties, with inventive blends like rosemary-garlic, hot honey, and cocoa cookie. All products are gluten-free and kosher, making them as versatile as they are flavorful. It’s no wonder their organic line has been spotlighted by the Organic Produce Network, earned a 2025 Good Housekeeping Snack Award, and even made an appearance on the TODAY Show as a foodie gift pick. And they’ve recently hit the shelves of West Coast powerhouse wellness-first grocery store Erewhon.

Built on Sustainability
Sustainability isn’t just a practice at Nichols Farms—it’s a philosophy. The farm recycles water from harvest for irrigation, leverages automation to set water budgets, and is expanding a solar field to help power its operations. To combat pests, they emphasize prevention, from winter orchard sanitation to pheromone-based controls, reducing reliance on pesticides. They’ve even patented their own equipment—the “Worminator”—to help manage pests in a safe, sustainable way. Nichols Farms also founded Hot Spot Ag, a sister company that helps farmers across California conserve water through advanced irrigation technology. It’s a reflection of their belief that good farming isn’t just about yields, but also about stewardship of the land.
