Raclette

Raclette is a cheese from Switzerland. It’s also the name of the wonderfully simple main dish made by scooping the melted cheese onto hot potatoes and adding onions and pickles.

The Swiss melt raclette in an elaborate portable electric gizmo. At home, just use a fireplace or the broiler. The fireplace is my preference. Just put a hunk of cheese in a shallow pan and push it close to the flames. Pull it away to scrape off the melted cheese, then push it back to melt some more.
