Serious beer geeks gave ecstatic toasts to the news that Seattle would house a branch of Toronado, the renowned San Francisco pub known for top-notch craft beers. Matt Bonney, a longtime fixture in the Seattle beer scene, planned the Ravenna version of the storied place as something of a mix between the company’s Haight Street flagship and a newer San Diego outpost. He set it up with 40 rotating beer taps—look for brews from the Northwest and California—plus options for dispensing Scotch, bourbon, and tequila. (Hard liquor isn’t served at the other locations.) There’s a Seattle spin to the food offerings as well, with a focus on charcuterie and “whole animal butchery.” Still, what does Toronado mean to Bonney, a brewery fan since his first job washing out kegs? “Great beer.”
