Lynch favors light, bright brews low in alcohol but high in flavor—like Shoreman’s Wild, a dark, sour ale with some of the acidity you’d find in a Sauvignon Blanc. No pulling pints here. The preference is 8- and 12-ounce pours that complement chef Bill Niles’s locally sourced cooking.
