On a typical day: Slow-cooked leeks meet a poached egg in a gorgeous dish studded with grainy mustard and cheddar shavings; pear harmonizes in a salad with celery root, fromage blanc, watercress, and rosemary vinaigrette; and three kinds of pork—housemade sausage, a single rib, and braised pork belly—form a trifecta of lusciousness.
