One of Seattle's most creative drinking spots, Canon creates arty duskiness with its brandy old-fashioned, using black truffle-infused cognac. Is that a little too creative? Well, that's just one example from the long bourbon/whiskey/rye-heavy cocktail menu. If nothing on the list floats your boat, ask the bartender for the "shrouded roulette." He or she will have you call your base liquor, and then devise you a cocktail around that. Canon serves tasty and sophisticated bar bites, too.
