Start with a wine-centric drinks list, including great amaros, vermouths, and sherries. Add bites that nod to the Walrus’s focus on great local seafood, like octopus terrine and sardines with caper salsa verde, and waiting turns into something downright enjoyable. Just don’t get too attached; your table at Walrus will eventually be ready.
