Transfer Living Jewel sake to a mason jar or other sealed container. Add pineapple chunks and fresh ginger slices and infuse overnight.
When ready to assemble, shake over ice and drink straight up in a coupe or martini glass. Use remaining pineapple or lemon for garnish if desired.
